The Business
The Hindquarter butchers at Knott End is dedicated to providing produce of excellent quality and taste, supplied from farms that are well known to them and that offer the highest standards of animal welfare.
Brought up on a local farm himself and holding a qualification in agricultural studies, owner Eric is fully aware of the important part the farmer plays in producing top quality meat. This is why The Hindquarter proudly advertises the provenance of all of their beef, pork, lamb, poultry and eggs.
The beef at Hindquarter is currently sourced from two local suppliers, Forrest's at Ribchester and Danson's of Pilling. Pork is also sourced locally from Barker's at Cockerham. Due to seasonal production variations the lamb comes from various local farms, including two neighbouring farms at nearby Overwyresdale.
All of the local chicken suppliers source their poultry from farms accredited by the Farm Assurance scheme, and all have been reared without the use of growth promoters and are fed GM free diets. Coming from just down the road, the supply of eggs at Hindquarter are supplied by fifth generation poultry farmers, The Fosters at Outer Rawcliffe.
The bacon is dry cured to the Hindquarter's own secret recipe and all of the sausages and burgers, including a reduced fat range, are handmade on the premises.
You'll also find products from Port of Lancaster Smokehouse, such as smoked mackerel and smoked trout, as well as a selection of cheeses, cooked meats and freshly baked pies, plus a range of preserves and 'cook-in' sauces.
